A foundational part of TKM stems from balancing yin and yang energies (see page 15) in the body. These energies are dictated by five complementary elements: wood, fire, earth, metal, and water. Each element is associated with its own season, organ systems in the body, taste profile, and color. The overarching philosophy of the five element theory is that all elements should be balanced, with no one element overpowering the rest.
Below is a brief representation of each element. Theoretically, the five tastes and types of food should be consumed in balance, which is what Korean cuisine aims to accomplish at its core.

Color: Green or blue
Taste profile: Sour
Sour foods exude a cooling quality and are used to treat conditions associated with excess fluidity such as diarrhea, over-perspiration, and sagging skin. This taste profile is also said to balance the mind and help organize scattered thoughts.
Sour food examples: Lemon, lime, sour plum, leek, vinegar
